    I have not tried these yet, but I have a question: do you think I could substitute the fruit? My family's not a big fan of pineapple. Could I use mango or papaya instead?

    The empanadas were delicious my family couldn't stop eating them when they came out of the oven. The filling was really good but I had some trouble with the puff pastry the first time I made this recipe...it was my first time using puff pastry. The second time I made these I did not mess with the puff pastry so much and stayed very close to how Marcela handled her puff pasty on the show and they turned out much better.

    Not worth the effort at all. Puff pastry didn't work. The filling came out and the puff pastry didn't bake as I expected.

    The filling was good but the pastry puffed up so much that the filling came all out. I will ***** the pastry before baking next time to avoid that.

    Not a Mexican Empanada. Puff Pastry does not work well. A poor substitute for the real thing. Not worth the effort.

    I didn't like the filling. Too bland. I will however make it again and use other fillings. It was easy to make which was the best part.

    These were very easy to make. I had all the ingredients except the fresh pineapple so I used canned pineapple instead. They came out perfect and looked just like Maricela's. These would be perfect for a party. Be very careful because since they are bite sized, you can easily pop them into your mouth and not notice how many you're eating! I will definitely make these again but I might make them a little bigger. :
