    Great way to use up left over beans, and my boyfriend loves this recipe. I have even done it layered like a lasagna which is easier and good, but of course the original is the best. I have tried it with cheddar but munster or jack is the way to go.

    Try diping the tortillas in hot oil before dipping them in beans, then roll them like you would an enchilada, line them up in a cassarole dish, heat to melt the cheese,any kind you like. This is the way our mexican grandmother would make them for us,and we still make them today.

    Easy and excellent!!! We loved this, but had lots of bean sauce left over, so we'll be making this again and having lots of nachos. Great recipe!

    Delish! I only had mini-corn tortillas on hand, so I double the quantity and used those. Had a several cups of bean sauce left over, and plan to use them for bean dip and to make additional "enfrijoladas" later this week. Agree with others that the same thing can be achieved by mashing the beans or using a hand mixer. Will be making this again, excited to try it with different types of bean. Don't heat your tortillas beforehand, just make sure your bean mixture is hot enough, and immerse them completely, flipping a couple times if necessary.

    Absolutely delicious! What a great side dish when serving Mexican. The corn flavor from the tortillas just melts into the delicious beans. Wow what a great flavor combination!

    A good way to use up extra frijoles de la olla...the bean puree was excellent. However, I did need to warm the tortillas prior to immersing them in the bean sauce.

    I would have never dreamed to do this. In a hurry you can use canned organic pinto beans rinse and add chicken broth to it. Absolutely delicious!!!!
