    I made this tonight to go with our Corned Beef & Cabbage - it was absolutely delicious... and easy! Very tender, not dry. I made it true to the recipe except I only had a generous one tablespoon of caraway, so that is all I used. The bread was a huge hit! I baked it according to the directions, maybe 2 minutes longer. I will be baking this again; SO good!

    I think the baking time might be off in the recipe. I baked it 40 min. and it was still doughy in the middle. Had to bake it for 1 hour total time.

    I made the bread with the exact ingredients mentioned and then I made another loaf with 1 cup of currants and 1 teaspoon of orange zest instead of the raisins and caraway. Both turned out perfectly and were delicious!

    This is the bread you'll want to make if your looking for true bread consistency. The crust is wonderful and chewy, the inside hearty but still light. Make the same day and plan on eating it, doesn't keep well for next day. Dough is very sticky and a little difficult to turn out but well worth the effort. I let it sit about 15 minutes before baking. Also, I only used 1 tbls of a butter subsitute

    I read some of the reviews, and thought this is the bread worth the effort and sure enough it was wonderful. I'm not crazy about caraway seeds, but do like a hint of it.....so used only 1 tbs. and everyone loved it. Thanks everyone who made and added their reviews. This is definitely easy and a keeper!

    I made this Irish soda bread last year and made it with golden raisins, the bread was so good we had only one piece left. When I worked in a big box store bakery, we use to cook them in cake pans.(8 or 9 inch round cake pans We spliced the top with a X and baked, that way it holds up and gives you a nice round bread like you might see in your local bakery. Just make sure you don't over cook it, it will get dried out

    This was pretty fool proof for a non-baker like me. I used dried cranberries instead of raisins (I plumped them in a little orange juice that I heated up first and I added the zest of one orange. It was delicious for breakfast with Irish Butter.

    This was easy and yummy. I substituted 1 cup buttermilk with almost a cup of regular milk and a tablespoon of white vinegar, because that is what I had on hand. It worked fine. Also, the next day, the bread was pretty hard and I had plenty left. I made the day old bread into bread pudding and it was delicious. The bread pudding included vanilla and cinnamon, which complimented the raisins wonderfully.

    Great recipe !!!! I was in the grocery store shopping for ingredients and my friend approached me and mentioned that she had just made Ina Garten's irish soda bread recipe and what a huge disappointment it was. That is what I had planned on making too !!! Needless to say I made this instead and was I ever thrilled with the results. Our company loved it and all agreed it was a keeper. The caraway seeds are a must !!!

    I am part Irish and ashamed that I've never even eaten Irish Soda Bread. This recipe put an end to that tonight! This bread got rave reviews and it was simple to pull together. The dough is a bit sticky so you need to use a lot of flour on the board. Its got the perfect touch of sweetness. I will definitely make this again.
