Putting the gnocchi in an ice bath for several minutes is a great tip to prepare them ahead of time while you get other dishes ready AND a great way to prepare gnocchi for a large group.

I used the recipe for the morel sauce -so easy! The simplicity really accentuated the flavor of the morels!
