Good comfort food. You can stuff whatever you have on hand into the Bracioline. I made exactly as the recipe prescribed and was happy.
It produces a very rich tomato sauce. I variation might be to replace a cup of the tomatoes with 1 cup of beef stock to tone down the tomoato just a bit.

This meal was outstanding and my whole family enjoyed it. I used pecorino cheese and had to add a can of tomato sauce because I used 2.5 lb of meat. This was the first time that I used pecorino and it made the meal.
