    I planted Lemon Balm in my garden a few years ago. Anyway, it spread to my lawn and now I have more Balm than grass. Not that I'm complaining, its a great herb! And seeing as I wanted to put this to use, I held a large family gathering and quintupled the recipe (I have a big family, it was a big hit with everyone, I will be making this again and again. The only thing I changed was that I did not blanch the Balm, it would have been greener if i had, but it may have also killed some of that great freshness of the just-picked herb and possibly some nutrients too, plus I was too lazy to wash an extra pot!

    I couldn't find lemon balm so I substituted basil and skipped the blanching step. I'm not sure the "pesto" was even necessary. The rub on the lamb chops was great--good enough for guests and easy!
