This seems quite easy, I've seen my nanny and mom can many things when growing up as a child, but I've never once attempted to do it myself. I'm 48 and doing it for the 1st time. I don't have a pressure thing, so I'm going to boil in a deep stock pot. My folks didn't have the pressure cooker thing ither. Good luck to me.

This is exactly how my parents used to can tomatoes except they didn't use basil back then. Passata is just a thick tomato juice or sauce. If you don't want to use a pressure canner just place your filled jars in a stock pot, fill pot with water up to 3/4 from top of jars and place your lids on with rings. Boil your water for several minutes until contents of jars heat up, then remove from water and let cool. Each jar should seal itself.

All of Mario's recipes are not American-friendly. What is massata? He should include a similar American product. I also wanted a recipe for a non pressure cooker.
