This is one of our favorite soups. It's great on a cold winter night.

I'm a Californian who is living in Switzerland now and the winters are very cold here, so I make a lot of soup for all those cold winter days. It's nice to try new soup recipes to change things up. This recipe is very good!

I made this for our first fall/cold day. Wonderful taste. I added 2 cups of diced tomatoes and a little more seasoning, per other reviews. Served with ham & cheese toast.

Good dish, but needs more liquid. Seemed more like pasta with broth over it. Flavorful, healthy (I think, and rich tasting.

This soup had a much more complex flavor than I expected for the few ingredients it contained! It really pays to heat the garlic, bay leaf and cauliflower in hot oil, like Mario did on the show, before adding the tomatoes and stock. It gave the soup a nice roasty flavor along with all the others. Every component stood out by itself and also harmonized with the whole! Great, simple soup.

all you need is good bread, parmesan cheese, a salad and a great big super-red for a wonderful meal!

For something so simple to make, this is amazingly delicious. I also added more pepper, and I threw in a handful of fresh Italian parsley as well. If you've got a head of cauliflower just waiting for something good to happen to it, this is really worth a try.

Surprisingly good - simple but hearty. With a little fresh parm and a loaf of french bread this made a nice meal. Even my 12 year old picky son liked it.
