    This dish is perfect fall/winter comfort food and seems like Mario?s take on the more familiar coq au vin with polenta and celery root thrown in instead of the usual vegetables. I had a feeling this would be better after steeping for a few hours, so I cooked it to the point of finishing the chicken in the morning, refrigerated it, and then reheated and added the polenta cubes just before we sat down to eat. All who tasted this had nothing but rave reviews!
