    I stay away from eggplant because I don't know how to cook it, but my husband suggested this recipe and it was absolutely delicious! It is easy to make and sauce was just wonderful. I couldn't believe I produced such a wonderful dish!

    The recipe was delicious and the directions was easy to follow. On one occassion I substitued can tomatoes to fresh one and it was delicious!

    I followed the directions exactly, but had these issues:

    I baked the eggplant slices to a deep brown as specified, but they ended up too charred and tough at that point, and did not absorb the sauce, plus had a burnt taste.

    It would have been better to stop at a golden brown, not a deep brown.

    Also, I made the sauce and cooked it until it was a thick paste as specified, but then it was not liquid enough to soak into my eggplant pieces, plus I didn't have enough sauce for the recipe. It came out dry as a result.

    So next time I will stop cooking the sauce while it still has plenty of liquid, and I will only bake the eggplant to a light golden brown.

    Apart from those two problems, the flavor was good.

    This was so much easier than frying the eggplant...healthier too.
    I made it simple by using a good jar of marinara sauce and store bought italian bread crumbs.
    Loved it.
