    I had a few problems with this recipe. The first being the fact that the pancetta I bought from the grocery store was sliced in slices smaller than a coaster. How am I supposed to "wrap" the hens in the pancetta, and then brown them? They kept falling off, so I affixed them with toothpicks.

    Lastly, the recipe says "with the remaining butter..." - there was no remaining butter! I simply added more.

    Molto Mario, I love you, but this recipe needs some tweaking.

    Intriguing flavors in this dish and the look is very festive. But we agree with the other reviewer, the cooking time is way off. Given that this recipe was likely developed in a commercial kitchen with a higher btu range than used by most home cooks allowed for some of the difference (as in browning the hens they may cook through more in that case.

    The cook time in this recipe is way off. Following the times listed in the recipe, our birds were still bleeding red (and no, they were not frozen, but fresh. We ended up putting them in the microwave - thank goodness we didn't have guests.
