Ingredients
- 6 tablespoons extra-virgin olive oil
- 3 cloves garlic, thinly sliced
- 1 small red onion, cut into thin slices
- 1 teaspoon dried chile flakes
- 1 tablespoon chopped fresh mint leaves
- 1 pound green beans, tops and tails removed
- Salt and freshly ground black pepper
Directions
In a 12 to 14-inch saute pan, heat the olive oil over medium heat until just smoking. Add the onion, garlic, chile flakes, and mint and cook 1 minute. Add beans, toss to mix well and cook until beans are soft, about 15 minutes, stirring regularly. Season with salt and pepper and serve immediately.

This was fantastic and easy. Probably one of the first green beans recipes I have loved that doesn't include pork fat or long cooking. The taste is fresh, but not thin. This will be my "go-to" green bean recipe from now on.

This was very easy to make, tasted really good. Next time I will add more fresh mint, and a little less chili flakes. I'm a weakling when it comes to spice...but surprisingly I was still able to eat it :

I'm not sure why this got rated as a "medium" difficulty dish, it was really easy and took no time at all to make. My wife and I loved this dish and she doesn't even like green beans. It was flavorful and delicious and best of all it was a long way from the same old boiled green beans that I grew up with. The only thing I did wrong was that I cooked the beans too long and they were a bit on the soft side, next time I'm cooking them just until they brighten in color then I'm turning them off. My only reservation in this dish was the crushed peppers, mostly becuase my wife doesn't deal well with hot food. Truth be told with the sweetness of the onion, beans, and mint the peppers aren't hot at all and only serve to enhance the other flavors. My wife is already asking me to make this for her again. It's a big hit for sure!
