I have the kitchen aid pasta attachments for rolling out pasta dough, and the pamphlet they came with has a few recipes, but they all call for 4 eggs. I was glad to have found Mario's simple recipe for this semolina pasta, which I made tonight. When everyone came home there was fettuccini laid out on every single counter. I let it dry for an hour and then cooked it in boiling, salted water (and a little oil for about 6 minutes. Served with pepper steak. It tasted wonderful. You have to try it to understand the difference from store bought boxed pasta because I can't explain it!
