I love this dish! Have made it 10 times at least! But I cube mine and dice the onions small so that kids will eat it. I usually omit the mint out of laziness, but I bet it lends another layer of flavor. This dish is just amazing!!!!!!!!

My husband and I love this dish, it's a great combination of sweet and savory flavors, and so easy to make. I made it for our last two Thanksgiving dinners and it was scarfed up immediately, even by the people who aren't winter squash fans. I usually serve it room temperature and that works for us. Definitely a keeper!

very flavorful, definitely a keeper. I finally put the sliced squash in the microwave until barely tender, and then finished it in a skillet to shorten the cooking time. I like a little browning on the slices for taste and appearence. My oven just did not do the job in a reasonable time..I gave up after an hour!

I have made this a number of times - it is INCREDIBLE. It's so very, very simple, yet tastes amazing. I'm not a big squash fan, but love this dish and have served it to guests who also loved it. Give it a shot...

I made this for my Thanksgiving celebration with friends this year. It was delicious! Everyone wanted the recipe after, and it was pretty darn easy. Yumm!

It was simple and delicious. The skin was nice and crisp.. you do not need to really peel it. I think the second time I made this my squash was a little sweeter so some slices were browning too quickly. The next time I may turn the oven temp down 25 degrees if it seems to be an issue. I loved this recipe.

This is the best butternut squash I've ever eaten. I read the reviews and decided to peel it and am very glad I did. We'll be making this a regular recipe in our family. Delicious!
