Made this recipe with 1 inch diced sweet potato instead of squash for thanksgiving. Goodbye sickly sweet casseroles! Is best when made in advance, which makes it perfect for a busy Thanksgiving Day. Shoot me, but I used dried mint instead of fresh, just reduced the amount by 2/3. Delicious.

I came across this recipe in the bookstore when I was browsing the Today Show's best of cookbook. So instead of butternut squash soup, I made this recipe and I can't tell you how everyone raved! I mean the technique and ingredients could not be simpler, but the combination of flavors--especially the mint--really put this dish over the top. Plus, it didn't have to be served hot out of the oven, which is perfect for Thanksgiving when it's next to impossible to put everything out still piping hot. Thanks again, Mario.

It seems a little weird to have a summery salad with a winter squash, but I tell you it definitely works. My favorite new recipe of 2004!

This is a great change from the usual seasonings for winter squash and very easy. Sweet and sour is a unique flavor which Mario makes use of more often than any other chef. We are trying them all.
