    I used red wine vinegar & doubled the garlic. I've tried this on both zuch & eggplant & absolutely love it.

    Good but way too sweet. I cut the sugar from 1/2 cup to 1/8 cup and it was still very sweet. I will make again though because i love the garlic and other spices. I think I'll not put any sugar in at all next time.

    Great recipe for all of those Zak's from the garden. Everyone loved them. I did use red wine vinegar because that's what we had on hand. Definitely will be making this again and again!

    This recipe makes the tastiest zucchini! I will likely reduce the sugar a bit next time. I let the zucchini marinate a room temperature overnight, the recipe didn't actually state to refrigerate or not and it worked great (my mom used to pickle at room temp, which this is similar to. Can't wait to make it for my next "munchie and wine night" with friends!
