I USED OCTOPUS, CUTTLE fish, SQUID, SHRIMP, CLAMS, & MUSSELS. Couldn't find Mlavasia but I used sauvignon blanc. Instead of onion I used two shallots and mozzarella instead of peccorino. In addition i used a basil garlic olive oil and lemon to garnish. The end result was what i was looking for "FANTASTIC!" My very picky pregnant girlfriend loved it! Oh, btw last review was correct on using only a teaspoon of red chili flakes instead of 1 tablespoon like the recipe calls for. Thanks Mr. Batali.

A nice quick way to prepare Calamari. But I think the measurement on the hot pepper flakes is a typo. I wouldn't add more than a teaspoon. And I have a seasoned hot palate!
