In a large bowl whisk together the eggs, sugar, and oil and mix thoroughly. Add the flour, baking powder, and optional flavorings, and mix well to form a homogenous batter. Set aside at room temperature for 30 minutes.

Heat a pizzelle iron until very hot. Pour 2 tablespoons batter onto the iron, close it, and return to heat. Cook until golden brown, about 2 minutes. Repeat until all the batter is used.

Optional: Remove pizzelle from iron and mold it around a pointed dowel to form a gelato cone. Or make 2 pizzelles and spread softened ice cream or gelato and sandwich them together. Then dip 1 end into chocolate sauce and enjoy.

    My recipe calls for same ratio of eggs to flour (I add a 1/2 cup more and more sugar and use of butter over oil and we use the traditional anise in the flavor.

    This is a somewhat savory pizzelle, not very sweet, but the flavor really falls flat unless the spices are fresh--and not worth it if you don't intend on adding the spice.

    Good recipe...however yield was incorrect. Should be 4 dozen...perfect for a hot afternoon and ice cream sandwiches for the neighborhood!
