This is a good basic meal, served over pasta ~ flavor improved with the addition of capers, add at the end to preserve their distnct flavor. The type of recipie that can easily be varied depending on the other things you find in the refrigerator or panty. Read the recipe once and then start cooking, adding and tasting ~ the basic enjoyable way to cook.

I cook one of Mario' recipes often, either from one of his cook books or off the Molto Mario show. This recipe is easy, quick and fantastic.

Delicious! I'm always nervous about cooking chicken, as I have a tendency to dry it out. This, however, came out perfect. It took a while to prepare, but clean-up was easy and it wasn't too high-maintenance while cooking. I added wild rice on the side, and it was a great meal.

Wow! Finally had enough nerve to try one of Mario's recipes (after watching very carefully - Used bacon instead of pancetta - used four half-chicken breast cut in half - had crusty Italian bread - my dinner company really liked it - felt so confident made Mario's "Escarole and Pine Nuts" as a side - they were both so easy - my kitchen smelled like Queens, NY - will definately make again - it was easy!
