I had a vegetarian coming to dinner so I eliminated the speck. I had to add some extra seasoning in the end to make up for that but otherwise it was perfecto ! There wasn't a grain of rice left over. I can't wait to try it with the speck.

I substituted prosciutto for the speck since I can't get speck around here. It was still fantastic. Very light and flavorful.

Even without speck, this risotto was amazing! I was a little worried when I didn't see cream but the butter and parmesan more than make up for it - it's creamy and perfect.
