Ingredients
- 1/2 pound fresh pork sausage, crumbled
- 1 pound ziti
- 1 pound goat-milk or cow-milk ricotta
- 1 tablespoon red pepper flakes
- Salt and pepper
- 1 cup pecorino Romano, freshly grated
Directions
Place the sausage in a frying pan, add 1/4 cup water, cover and cook over medium-high heat 6 minutes. Remove the lid and cook for an additional 15 minutes, until the water evaporates and the sausage is browned. Pour off any excess fat.
Bring 6 quarts of water to a boil and add 2 tablespoons salt. Cook the ziti in the boiling water according to the package directions, until tender yet al dente.
Meanwhile, add the ricotta to the sausages and mix in the pepper flakes and salt and pepper, to taste. Drain the cooked pasta, reserving the cooking liquid, and stir it in to the sausage/ricotta mixture.
Add some of the pasta cooking water if necessary to loosen up the mixture, and season again with salt and pepper, if necessary. Top with grated pecorino and divide evenly among 6 pasta bowls.

Whoever trascribed this recipe forgot to put in some garlic and ginger. As Mario cooked this on TV he stated that some port cities picked up the use of ginger. As he made the sausage he added ginger and garlic to it. I sauteed some garlic and ginger and then added the meat . Mke sure you brown the meat or it will not have enough taste.The chili flakes are what really gives the dish some kick , I also used some black pepper. Mario also added some chopped parsley tor the final touch , and this also added some more flavor. I would make this again, not a bad quikie dish.

I love this recipe. Spicy, creamy and very easy to make. One other nice thing about it you can make it as spicy as you want by using sweet Italian sausage instead of hot. However, I really like the contrast of the spicy sausage with the creamy ricotta.

As usual, the reciepe and what was cooked on the show bear little resembelence to each other. I have learned to not make Mario's reciepes from FN unless I watch the show. The reciepies in his books are correct.
