WOW way too much pepper!!!!! I like fresh ground pepper but I was not able to eat this after Ii made it. I questioned 4 tablespoons as i was mixing it in. a waste of time and ingredients.

I made this recipe for my birthday last week, and it was NOT what I expected. I thought... I had just gotten back from Italy, and I wanted to make Carbonara for everyone, because it was so good there! I turned to Mario, because a. he's Italian, and b. he's a great chef. I was wrong :(
First, cook the pancetta seperately, THEN add the onions. There was absolutely no pancetta flavor, until you acutally took a bite of one, and secondly, and onions gave off too much liquid and didn't let the pancetta really cook. Secondly, add GARLIC to the pancetta and onion mix. Although this dish was good (you can't go wrong with creamy pasta it had NO flavor! Would I make it again? Yes, but tweaking things here and there.
