I just finished watching the episode with this dish. Mario Batali used an incredible amount of red pepper flakes and doesn't use any cheese in the stuffing. I made it by watching the show and I thought it was great. The recipe listed looks like a decontructed chicken soup which I'm sure is good too.

after searing chix for 1/2 hr
add warm(in metal mix bowl ontop of baking stove where you are roasting chix stuffing to cavity then roast.
after mixing in some whole canned cranberries with my baked buttery bread crumbs, micro diced sm. handfull of onion, celery, and sweet peppers also a shake of celery salt, onion powder, garlic salt and roasted garlic mixing with egg.dont forget the shredded graded parm, it turned out great. even my aging parents that i care for and take care of rated it amoung the best they ever had.
