    just made this and finished eating some-we thought this was very nice...not too sweet-good with tea or coffee. i made a few subs as follows due to necessity: walnuts and dried cherries soaked in strawberry kombucha, whole milk ricotta and palm sugar(more like lt brn sugar. we will have this regularly-fine cold, too. we did not like the butter on top though so will skip it next time. this would be a great dessert with xxx sugar or ice cream on top--well, what wouldn't be?

    This was great. I was thinking it would be a little more creamy like a cheesecake. It actually seemed a little dry more like a cookie. I was out of dry fruit so we used chocolate chips. My children, 9 of them, want this made again. One got home from soccer and ate a left over slice for lunch and proclaimed, "This is so good I cold eat it Breakfast, lunch and dinner!"
    Next time I would like to try it with dried cherries and toasted pecans.

    I really like this recipe; my husband, not so much. I think that I will use more raisins the next time I make it.

    I did not have enough ricotta, so I substituted fat-free sour cream the difference. I used melted butter in the bottom of the pie pan and on top of the "pie". These changes to the original recipe worked out very well.

    I think this would be a good dish to serve at brunch.

    COOK'S TIPS: Put on a disposable vinyl glove to pat down the top of the "pie" and to distribute the melted butter on top. The back of the wooden spoon did not produce the result I wanted.

    This recipe is fast, easy, and delicious. I substituted dried apricots for the raisins, and almonds for the pine nuts and I really liked the way it came out.
    I think the dabs of butter were unnecessary, though (maybe since I used whole milk ricotta?. I had to blot the top of the "pizza" with a paper towel to remove some of the excess butter that didn't soak in.
    But, overall? Delicious!

    Very good, family like it. Easy to put together. Cooks while we eat our home made pizza. Done just in time for desert.
