    Not only is this a great recipe for spinach and a great recipe for eggs, it is quick, delicious, and makes a great impression. Plus, my kids loved it.

    Very tasty dish. I love eggs and spinach so it was right up my alley. The smoky cheese gave it a nice flavor.

    We used asiago instead of the other cheese. We also use about 1/3 butter instead of all of the olive oil.
