I was tired one night and looking for something really simple to make...a recipe with all the ingredients that I had at home. Then I found this! It was so simple to make yet so delicious. I didn't know how it should have looked like after "folding" egg in... So I just let the eggs sit on top of the tomato mixture. It turned out to be sort of a two layered egg frittata/ pancake. It was really pretty to look at because of the two distinct colored layers. It was delicious!
