    This farro soup turned out great. I was in Lucca last spring, this was just as good as the couple of times I had it there. Recipe notes: Borlotti beans are sold as Roman beans in our stores. You will have to add a lot of x-tra water, the farro really soaks it up. And don`t forget a generous drizzle of your best extra virgin olive oil on top of the cheese and basil to finish it off.
