Ingredients

  • Salt and freshly ground black pepper
  • 4 (1 to 1 1/2 pound) whole fish, sea bream or sea bass, scaled and gutted, head and tail intact
  • 4 stalks celery, sliced thin, leaves reserved
  • 1 small bunch each parsley, thyme, and oregano (or any other mix of herbs)
  • 8 tablespoons extra-virgin olive oil
  • 2 lemons, sliced thin
  • 2 oranges, sliced thin
  • 1/2 cup dry white wine

Directions

Preheat oven to 450 degrees F.

Season the fish, inside and out, with salt and pepper. Stuff the celery leaves and herbs inside the cavity of the fish. Pour 4 tablespoons of the olive oil on the cookie sheet and cover with the celery, lemon, and orange slices, reserving 4 slices each of the fruit. Place the fish on top of the celery and sliced fruit and place the remaining slices of fruit on top of the fish. Pour the remaining olive oil and white wine over the fish. Place in oven and cook for 20 minutes.

    Very Tasty, Awesome blend of various ingredients added a rich and delicate flavor to the Sea Bream I cooked. All the ingredients that were underneath and on top of the fish I took it out and there was no any bitter taste thereafter. Thanks for posting this recipe!

    This dish was absolutely delicious. People that didn't like fish actually liked it. I did change it up, I used Bass filets instead of a whole fish. I finely chopped the herbs in my chopper, and sprinkled the herbs all over the fish. Only used about half of each herb bundle though, and more olive oil. I followed everything else according to the recipe. It still came out great, and I will definitely make this again. The reason I didn't give this 5 stars, and it could be all my fault...there was a very slight bitter taste in the fish..dont know if it was the lemon/orange peel? But it really didn't bother me or anyone else...it was a dinner for 10 people and there was nothing left!
