Came home on my lunch break to get this together so it would be ready when I got home. Oh my-was this the best EVER! I eliminated the bottom crust to save calories and just sprayed with canola oil, then put the filling in and topped with a pie crust. Endless possibilities with substitutions and additions. I served mine with roasted brussel sprouts and quinoa.

Made this for Easter and there wasn't a crumb left. A big hit. Better than quiche by far.

Five stars plus! If there were more stars I would plug them in. This is an absolute great recipe and I use it often for ladies luncheons. I sub the ham with slivers of prosciutto running thru - delicious!

Made this last night with a mixed green salad for my husband and parents...they loved it. Had leftovers for breakfast. The only change I made to the recipe was a little fresh ground nutmeg.

Hi. I just watched Food Network's Mary Nolan early this morning. My future daughter-in-law's bridal shower is on Sept. 12 and the bridal party has decided to have a Brunch. This recipe will be perfect. Actually the entire show I watched will be great to bring. I am going to make a few of the Riviera Egg Pies, the Minted Fruit Salad, the Chocolate Chip Cheesecake Cupcakesand the Bloody Mary's.

I made this for dinner, served with a simple lettuce salad with oranges and red onions. Perfect texture, taste and presentation. Thanks for the recipe! Also very versitile you can substitute vegetables and meats with ease.

By the fact I could have eaten the whole pie myself, this is more than grand. Served it to my sewing guild, and, we all know how good those cooks can be!
There are several vegetarians so I used hearty smoked tofu with faux ham seasoning I found in a ham and bean package. Did not use the beans of course. Cooked it all as written. The top crust is a huge hit! I made my own crusts from scratch only because I love making pie crusts.
Yummie yummie for my tum tum tumie!! Emmmm good!

I made this for Easter Brunch and it was a big hit! Everyone loved it, and kept asking for the recipe. I'm so glad I couldn't sleep the other night - I was able to stumble across Chic & Easy in the middle of the night and discovered this recipe there.
