    I didn't have much luck with this recipe. The topping was far too runny to pipe onto the cucumber. I think my Greek yogurt wasn't firm enough. It was the consistency of sour cream. Perhaps it would have been better to drain it a bit, though the demonstration did not show that. Also, I think I over pureed it. I had read the reviews, so I added a little extra goat cheese, but that did not help. I even refrigerated it for several hours and it still did not firm up. The taste was not well received at my party - a little bland for Texas, I think. I like the idea of using a cucumber in place of a cracker or chip, so I think I'll try it again with a flavored goat cheese.

    Very tasty. The recipe could easily serve 8 to 12 people as an appetizer & takes a while to make so you might want to make the puree a few hours ahead of time so you just have to assemble the medallions before guests arrive.

    For my daughters college graduation party she wanted to prepare all the food for her family and friends. She is really into the food network. Each of us choosing items we wanted to prepare for the menu. These were one of the appetizers I did and they were amazing!!!!! Probably the first of the appetizers to disappear. Each to make ahead. Everyone wanted the recipe!!!! This was my summer recipe treat to take for an appetizer!!!!! Great!!!!

    I used less than half the salt, which was good. It certainly was not bland. If I make it again, I'm either going use more goat cheese, or less of almost everything else, except the red bell pepper, the garlic and the mint. Try to find really fat cucumbers so you have a decent sized medallion. I couldn't find English, so I tried regular and Mexican (from Canada. The taste of the Mexican wasn't as popular as the regular. I might try adding some chopped cilantro, and possibly some cream cheese as well. As is, the mixture was a bit runny. Also, the red bell pepper garnish was pretty, but added unwanted bitterness. Maybe a sprig of mint, or a pimento for color?

    The recipe should should have been written as: "Zest of one lemon" so it would be clear! I added the zest AND juice; it was tart and the mixture was thin. I made it a second time with just the zest, all I tasted was the salt! I then watched the video and saw that more than 4 oz. of goat cheese was used, appeared to be an 8 oz log! No wonder the taste and consistency was all wrong. This recipe is just a disaster!

    I made this for one of our "Family Feasts". Everyone agreed it was an interesting idea but was bland. I was very disappointed as we all normally are great fans of goat cheese.

    The next time you're going to someone's house for a party or dinner and they tell you to "bring an appetizer" - bring this. Seriously easy to make ahead of time, and a way better take on the veggies and dip routine. I made this for a party - half with goat cheese and half with feta for the folks who don't do chevre - and they were the first appetizer to disappear. Several asked me for the recipe. P.S. when using feta, definitely do cut the salt in half.

    I made this for my friends and they loved it!! my friend loved it so much he made them twice alreadyfor his girlfriend ! it's so tasty and easy to make ...mmmmmmmmm now I m thinking to make them again.

    My friend made these the other night and I could not stop eating them. Absolutely loved them. What a great snack/appetizer for spring. This will be a standby for my entertaining!
