Sooo good! My boyfriend and I loved this meal. It had the right amount of spices, chicken was tender. I made it with chicken breast and the chicken was still moist. I definitely will make this again.

This recipe is a keeper. I used chicken breasts as that was what I had on hand. I like the fact that I always have all the ingredients on hand so it will be a great go to meal. I also served this with Melissa's Flour Tortilla. My husband is still raving about the meal.

This was really delicious!! The only changes i made were to use 5 chicken legs and 2 boneless breasts and then cooked it in 350 degree oven for 35 minutes. The meat was so tender and the spice rub was great. This recipe made a ton of rice, which my husband didn't mind!

Excellente! Only had 4 chicken legs (skin on and vegetable boullion hand (had to make my own stock. Used diced fire roasted tomatoes instead of tomato sauce. Yummmmmmmmy!

This recipe was excellect! Nothing bad to say about it, maybe except that there wasn't enough rice to go with so much chicken. It was still eaten nevertheless. Very easy too! One pot wonder!

Delicious and simple! I have made for my family a couple of times now and they have asked that I add it into our "Regulars". It is a very forgiving dish and you can adjust the spices to suit your taste. I double the rice & liquid portion of the recipe as I have some hearty eaters.

Lovely, inexpensive, and easy-to-prepare recipe. Redolent with cumin and cayenne pepper, it's comforting and filling. A one pan meal with left-overs. Since it calls for a whole chicken in eight pieces, I took the opportunity to learn how to cut a whole one. It was pretty easy, even with a knife overdue for a good sharpening. The result was incredibly cheap - a whole chicken for 4 or 5 dollars. As some have said, it's a little easy to over-salt the dish; the rub can carry most of the salt. I lightly salted the peppers and left off the salt at the end. Just a great recipe.
