This is what I did. I wanted something wheat free so used an entire 19 oz can of black beans (rinsed well and pureed in food processor. Added 3 eggs and 1/3 cup of canola oil and vanilla. In separate bowl, sifted 2/3 cup sugar and the instant coffee, 1.5 tsp baking powder and cocoa (I used 1/2 cup good quality cocoa (the darker the better. Added dark chocolate chips in the batter and some for the top and these were superb! My family devoured them in 1 day!!

These are great brownies! My daughter made them and followed the recipe exactly. They were very light and tender. They had a great chocolate flavor and I think that the instant expresso does add a richness to them. I froze 5 baggies of black beans which will be used to make these again and again! Once again, excellent recipe Melissa!

These were great! Took a bit more time in my oven. I followed everything else exactly. They were not too sweet and we loved that. They were also chewy - not dry and cake-like which we also love. Will make again. Oh - I used regular chocolate chips because I always buy them on sale and had them on hand.

Loved the brownies. They are not as dense as traditional brownies, but my family can't stop eating them. I didn't have any instant coffee, so made them without it. can't imagine them being any richer!

Had to leave them in oven longer also used an 8 x 8 pan. They were fudgy in the middle. Next batch I but in for about 10 minutes longer see if the middle bakes more. It had a very stong coffee flavor no bean flavor. The kids loved them!
Tweek it a little more and see what happens.
Thanks Melissa Keep us on our toes!

Not bad, but not great. I used Stevia In The Raw for half of the sugar, full-size Ghiradelli 60% cacao chips, and chopped pecans. I am not sure getting a bite or two of beans per serving counts as extra nutrition or fiber, but it is better than nothing.

I liked them. Not too sweet. Gave to some moms and they liked it too. Haven't tried it on the kids yet. I did have a little issue with timing as the sides were done, but the center not at all - so I just didn't serve the center. Next time I'll keep in a little longer. Yummy.

I thought these brownies were excellent! They were very fudgy. I used full-sized chocolate chips because they were on sale, and it worked out fine. I also made it in an 8x8 pan, and I don't know if it affected it, but they took longer than 20 minutes.
