This has become a go to recipe for us. I have a vegetarian, and 2 gluten free family members. In addition I have a son who is a definate meat eater. Planning around this can be trying. EVERYONE loves this soup. It is flavorful, healthy and easy to make. I use canned black beans but the flavor is still wonderful.
I came home today with nothing planned for dinner. I had most of the ingredients and the soup was just wonderful.

Delicious! So fragrant and tastes really good. It was very easy to make and I had most ingredients on hand. We loved this recipe, would definitely make it again.

The soup has finished simmering. Even though it's not mealtime now, it smelled so good that I had to have a bowl right away. YUM! The burn from the pepper flakes is a tad strong for me, but I fixed that by adding a dollop of sour cream to my bowl. (Still... I'll halve the amount of peppers next time. The flavors are a well-balanced blend of sweet from the base vegetables, acid-tangy from the tomatoes, and spicy [Did I mention those peppers already? ;- D ]
I had thought 2 tsps. of oregano sounded like too much; so instead of adding less, I just refrained from rubbing it as I usually do, and it doesn't overwhelm.
The only minor criticism I have is that it doesn't seem much like a BEAN soup. It's really more of a vegetable soup WITH beans. But that's okay, because it tastes really great! Thanks, Melissa.

Very tasty. A little bit on the spicy side but the burn doesn't linger long. Made double batch using dried beans and have some stored away for lunches. I used all low sodium ingredients I coud substitute. Still very flavorful.

As everyone says, "easy, flavorful, and delicious!" We did add a second can of beans, just to make a heartier soup, but that is just personal preference. We will have this regularly.

This has got to be one of the best soups I have ever tasted! The spices and veggies were perfect and blended well together but the heat of the red pepper flakes was a bit surprising but I still loved it! But next time I will add more beans and less pepper flakes and maybe a dash of Red Hot hot sauce for a little tang!

Great carrots were great,I also added pouched chicken breast.Everyone loved it with corn bread so good.I also added a can of white beans.

This was easy and delicious, two of my favorite things when i cook! I added 1 cup of kidney beans since i thought it could use a little more substance, but otherwise made no changes and it was delicious!

We made this and the cubano sandwiches for dinner yesterday. My husband usually gives me a hard time when I make soup ("what is with you and soup?", but he commented several times between spoonfuls that he loved it! Very, very flavorful. I wanted more beans, so I threw in a can of kidney beans and it was wonderful. Thank you Melissa D!
