Simply Wonderful!!! I came from the Doctor today with a warning that I needed to drastically change my eating habits. Since I love soups, but haven't been fond of making them, I was searching for a healthy one to begin my change. I chose this one because of the reviews and was astounded to find that the reviews were understated. This simple, yet delectable soup is now a favorite of mine. I couldn't believe how all of the flavors blended together so perfectly. I was out of red pepper so I had to use cayenne pepper in it's place. The Bouillon was a perfect addition that really made the soup burst with flavor. Thanks Melissa!!!

YUM - This is really good soup. I added salt and 1 more tablespoon of chicken bouillon to give it a little punch.

I made this right after viewing the show. Simple and quick, and I had most of the ingredients on hand. The only substitution I made was the bouillon base and the diced tomatoes since I didn't have those. I had beef stock leftovers, and a can of crushed tomatoes with basil, and stirred in a big spoonful of tomato paste. The recipe calls for 1 tsp cumin. Melissa said 1/2 tsp on the show. I am not a fan of cumin, so I used 1/4 tsp. This turned out with a great thick texture, which I like in a soup, and deep, rich flavors. I love that it is a simple recipe, and something I could put together quickly. I divided the soup into four French White CorningWare mugs for weekday lunches. I plant to top it off with a couple of tablespoons of non-fat greek yogurt and a sprinkling of sliced green onions.

This is surprisingly good! In fact it's the first recipe I absolutely HAD to review. All the ingredients were on hand, which is always a plus, and I was able to start as soon as today's show finished. I was reluctant to add the dried oregano, since I find it can overpower a dish, but it has turned out fine. I started the soup early, to have time to pump up the seasoning for lunch, but this recipe is full of flavor as is.
