    I made this with Quinoa instead of the Bulgar - turned out terrific!. Going to make it this week-end for our football game. Roast Pork with these stuffed veggies!

    I made this side dish and it was delicious, but it cost over ten dollars all by itself. The peppers were yummy, but they should be for $2.49 a lb. Not two for a dollar where I live. Sorry Melissa.

    I absolutely loved this! I totally forgot to buy the mushrooms at the store, so I had to make it without that, but it was still amazing. Actually I loved the filling by itself before it was stuffed. I found that the top got a little dry and crunchy after it was cooked. Maybe next time I'll start cooking the boats while I'm making the filling so it won't have to cook as long with the filling in it. Also, I will totally make this in the future as a sidedish not stuffed into anything!

    This was so so good. my husband is such a picky eater(that putting it mildly...lol, & I really thought he wasn't going 2 even try it, but he fooled me this time>>> but the funny thing with him is that with any kimd of STUFFED PEPPER>> he only eart the filling( I knew there was know was he would try the zuccinni>>BUT>>he had no idea what was in the filling, othere then the bulger wheat>>So even thought he only ate the filling, he ate more veggies, in 1 meal then I have been able 2 get hime 2 eat in problally the last 6months>>>>>thanks so much Melissa>>>YIPPEE>>He Liked It !!!!!

    Whole Foods had the most gorgeous, funky heirloom tomatoes so I picked up some big ones for this recipe. The bulgur flavor goes PERFECTLY with the cooked tomatoes. (I didn't try stuffing a zuc I used the food processor like Melissa did in the show, and I may have over-processed the veggies, but in the end, once mixed with the bulgur, it didn't seem to matter one iota. As predicted, my husband and daughter refused to eat them, but I was prepared for that and ate them all week for lunch - YUM - more for me!

    I couldn't find bulgur wheat at the grocery so I used whole wheat coucous with yellow, orange and red bell peppers. I have to say it was yummy and I know I am going to be using this as a main dish meal again in the future. Thanks Melissa!

    What a great meatless dish. This is a main dish for my family -guess we don't need all the extras. We have a garden and I always have way too much zucchini. Thanks Melissa. I sure wish Food Network would air your show at a different time. At least they could run a repeat on a week day, etc. I'm not sure why they do that. You and Ina are my two favorites.

    This recipe was amazing. I have never tried Bulgur before but I know we will be using it again, and I found it in my bulk area. Thanks to some fantastic deals at Sprouts this weekend, I was able to get all the veggies needed for less than $5. We loved it and will be making it again. Thanks Melissa!!

    I made this recipe this evening. I had run out of bulger wheat so I substituted kasha (buckwheat groats. The recipe came out wonderfully. Good job Melissa!

    What a great meatless recipe. This is so easy. My husband likes me to add ground turkey to his vegetables. Chopping vegetables is theraputic for me but, letting the food processor do the work is much needed when there is a time restraint. I live in the plains states and fresh vegetables are in abundance at the farmer's market, and very reasonably priced. I think Melissa has come up with some wonderful recipes and I always go to her site to check for a new "gem". Keep up your wonderful creativity Melissa!
