    Thank you Melissa for the challenge of trying something new. I am looking forward to trying this out in the near future. We have never eaten tofu and think that this recipe is the place to start.
    My problem with this recipe is the comments of others. Don't be cruel with your comments. You need to just let people know how you liked it, any problems you encounter and the ease of preparations. Some have tlked about it not being easy and that it is not quick...read the info at the top. It does say that it will take 1hr and 45 min to bake. Stuffing shells can be time consuming. Stop your whining and keep on trying.

    I was intrigued by the tofu in the stuffing. After making them, I would have never guessed from the taste that it was in the stuffing. I did spice up the sauce with some extra spices, so I thought it was pretty good, and it had a nice fresh taste to it. I also liked the cheese, tofu, and spinach stuffing. These shells had a lighter taste to them. I often find them to heavy and rich. These were not. I do think that these would also be good with some Italian sausage either mixed into the stuffing, or cooked into the sauce. I think this recipe is a perfect springboard to make into something that your family likes. All in all, I think this recipe is definitely worth trying.

    Melissa, Great idea to use tofu, especially if you are trying to eat healthier! My rule with pasta, is anything goes! As long as the cook is true to their taste and likes, substituting ingredients is just fine. I have been making my own marinera sauce for 23 years, so I used that, and left out the tofu. Stayed on track with the rest of your recipe. Delicious. At first glance, I thought there might be too many ingredients, but honestly, pretty much everything you list is common stock for the true "cooks" kitchen. Keep those innovative dishes coming, and don't listen to the naysayers. You are doing GREAT!

    Flavorless sauce. The stuffing had an Icky consistency. Substituting cottage cheese and tofu for ricotta cheese doesn't work. If you're used the the ricotta taste, this is gross. It has an enormous amount of ingredients also. No way it cost $10 to make. I find that disingenuous. My family was not impressed.

    My whole family really liked this, even my very picky three-year-old. I did find the ingredients lacking in the flavor department, so I added a bunch of fresh chopped oregano, thyme and italian parsley. The flavors were great and no one guessed that the stuffing contained tofu! (I also used organic pasta sauce in a jar just to save time. Plus, my eight-year-old loved helping me stuff the shells. Congrats, Melissa! You've got a loyal fan!

    This is really good, except I omitted the cottage cheese because I hate it. I also used an organic ready-made sauce to save time. The thing that makes this dish better is remembering to squeeze out excess water from the tofu, then saute' it in herbs and spices, especially onions. Great alternative to using meat or chicken.

    I love finding vegetarian recipes on the Food Network website, and this is a great one. Although it seems like a lot of ingredients, I really didn't spend much money on this recipe because I already had most of the items. The sauce is just delicious, though I might add a bit less water next time. I did add a little extra cheese because I love cheese, and I made sure to salt the veggies as I cooked them.

    Just great - can't wait to see more from Melissa!

    OK - I get the fact that this is a healthier recipe and it hides veggies for the kids, but seriously? First of all, there is no way this costs less than $10. Secondly, for a chef who prides herself on "being a mom with quick, easy recipes", there is a ridiculous amount of ingredients in it. As for the taste? I didn't make it. I am looking for fast easy recipes to make for my family - the amount of ingredients certainly doesn't lend itself to an easy dinner on a weeknight.

    This was a waste of time to make. The sauce had no flavor and neither did the filling. I will NOT make this again. I will stick to the sauce I usually make and make my own filling. Terrible recipe.
