    This was a very good recipe. And one thing that makes it so good is that it is ajustable for each family. I found the recipe to be "juicy-er" than we like, so next time I'll use the 2 cans of tomatoes but I'll drain them first. Also, we really love ricotta cheese and we're not familiar with tofu so I substituted and increased the amount of, ricotta by quite a bit for tofu. Reallly delicious and the spinach was a good addition, too.

    (My husband and I had it as a "left overs" meal a couple of days later and it reheated in the microwave very well.

    Since I didn't use the whole box of shells I had left over stuffing, so I melted butter and mixed in some garlic powder and brushed it on some hamburger buns I had on hand and spread my leftover stuffing on top of that. A few minutes in the oven and our meal was ready. ( There were no left overs of the garlic bread! Yum.

    I made this for my family with a slight alteration, I used leftover chicken since I did not have any tofu. I just put the chicken in the food processor and ground it up.

    Although the recipe was a little more time-intensive than I'd expected (then again, I'm eight months pregnant, so any amount of time standing in the kitchen isn't that fun, it turned out to be delicious! The leftovers tasted even better the next day, and the veggies, cheese, and tofu made it a filling and hearty dish. I'm hoping to make another batch to freeze before the baby comes!

    My picky family loved this dish. Of course, they didn't know it had tofu and veggies in the shells.
