I made the tilapia, but did not make the relish. Since I don't have a grill, I cooked the fish on a bed of spinach with chopped shallot in parchment envelopes in a 450 degree oven for 20 minutes. I made the marinade exactly as specified and let the fish marinate in it for 1/2 hour before cooking. The fish was light and flaky and perfectly cooked. It was tasty but needed just a little something more to make it great, not sure what...perhaps a little more ginger or a little heat? Regardless, I enjoyed it and will make it again but will tinker with the seasoning a little.

This recipe turned out to be very tasty.I have not tried the tilapiya with orange but I did summer ralish exactly as she told and it was amazing. I used oven to grill vegetables and pan to grill fish.

    Really enjoyed!!

Flavorful. Simple. Amazing. My husband and I loved this and can't wait to make it again. I did not make it with the spinach or relish, I made different sides. I also added the juice from half the lemon. Definite do over.

Very good, but would not use white vinegar again.

We found this to be quite bland, and not at all "citrus-like". We ate it, and ate the leftovers, but threw the recipe away. We wouldn't chose to make this again.

Excellent. I followed the recipe, except I added some cilantro to both the marinade and the relish. Also, I used the relish to top crostinis, which came out great.

Made a simplified version, and hubby said it was the best dish I EVER made. Prepared summer relish per directions (used sherry vinegar. Then just grilled salmon which I seasoned w salt and pepper and a squeeze of fresh lemon. Layered it all on bed of spinach, and it was fantastic (and much easier. Still lots of flavor. Light and satisfying. Making it again tonight.

Great recipe! The summer relish was delicious and flavorful! I grilled the veggies on my "George Forman" grill and I baked the fish in the foil packets in the oven.

I was looking for something to complement citrus grilled pork and found this Grilled Summer Relish and was not disappointed! The sweet of the corn and bell peppers nicely offset the tart dressing and the squash made this a hearty sidedish. We like a bit of heat and I had a jalepeno on hand, so cut in half and grilled with the bell pepper. I've never tried grilling the seed core but gave it a try and this added nicely. We will definitely add this to our repeat list and will try it with the talapia next time! Thanks!!
