    This was a great dinner in total. I don't like cold rice so I served this hot and it was great.

    My family loved the lettuce wraps but the rice salad was a major bomb. We did not care for cold rice and the dressing was very bland. I managed to salvage the big bowl of rice by putting enchalada sauce over it, heating it uo and serving it with black bean and corn burritos the next night,

    YUM!!! I didn't have any fresh sweet red peppers, so I substitued a jar of roasted red peppers drained & roughly chopped. It was heavenly! This cold rice salad was the perfect compliment to the TURKEY LETTUCE WRAPS from the same episode.

    The ingredients for this salad are great but the dressing lacks flavor. Even though the dressing ingredients appear interesting, when they are mixed into the salad, they don't hold up. It really lacked any flavor.

    Made this last night and I LOVED it! I used green onions instead of red and I added rinsed and drained black beans for added nutrition! The only thing I will do different is maybe a bit more vinagar.

    I also made this to go with the wraps and decided to make it at the last second and didn't have red peppers or red onions. I did have a white onion and it worked just fine. I didn't have time to cool it so I served it not and it was great. I've been eating it as leftovers for two days. But inagreenwith Wendy there is something missing from the dressing ..maybe some red wine vinegar or some sort of punch. Delicious salad!

    Made the salad to go with the wraps. This was a great pairing. Thought the dressing was missing a little something but not sure what. Loved the veggie that were added-made a very pretty presentation. I will definitely make again with some sort of tweak to the dressing.
