    This is a recipe that you might pass up because it looks too plain. But don't. It's simple to prepare and quite tasty. The leftovers are also good at room temperature the next day.

    Very good and easy. I just bought fresh corn charred 1 ear on the gas stove. I also added some minced garlic. Will do this again.

    When I saw Melissa demonstrate this recipe on today's show I knew I wanted to make it for tonight's dinner. I had half a red pepper, half a zucchini and half an onion sitting in the fridge that needed to be used. I also added some minced garlic and a half a rib of celery. I had to use frozen corn since fresh isn't in season. Super quick to put together and so colorful. Makes a great side dish.
