    Again, great hit with the family. I made a few changes, like, added chopped dried apricots and chopped some cashews. Agree that it completely complimented the meal.

    Who knew that adding finely diced dates would add sooooooo much flavor to couscous. This was insane awesome! And, how perfect that if you make all three recipes from this episode, you use the entire can of chicken broth - nothing to feel bad for throwing away and/or nothing to store. I bought dates from the bulk section, just enough for the recipe and they were about 75 cents!

    This is addictive! Easy to make and so darn good with the meatballs and the carrots. I live alone so I give a lot of food away but this I ate all by myself over a few days. Is now a staple in my repertoire. Thanks Melissa.

    Wow Esther, I had no idea 30% of the population is gluten/rye/barley/malt intolerant. I am one of the fortunate 70% that can have couscous, and I love this recipe. I substituted whole wheat couscous the last time I made this dish for a higher fiber content, and it made no difference in the flavor of the dish. The first time I made the couscous I served it with the Moroccan meatballs, and it was delicious. This time I served it with pork chops and it was just as good. It's not something I can make on a whim, as I don't usually keep dates on hand, but if I have it on my menu it's easy to pick up a few dates at the store in a bulk bin in the produce section. Yummy!

    Love your program. However, couscous is something that about 30% of the population can NEVER eat and remain well.
    I am gluten-intolerant and cannot eat couscous.
    However, I can quite easily adapt this recipe to one that is healthier, gluten-free and cheaper by using hulled millet instead of the couscous.
    A more nutritious alternative (AND FASTER TO COOK is to substitute the couscous with QUINOA FLAKES. Quinoa flakes are saponin-free and cook in 90 seconds from the time the water/broth starts to simmer rapidly. I usually add pico de gallo to my quinoa flakes, but I happen to have some dates on hand and this would be really good with pork that I was planning to cook for dinner tonight.

    Remember, 30% of the population cannot consume wheat, rye, barley or malt in any form due to allergies and Celiac Disease.

    This was the first time that we had ever eaten couscous. It was simple to make yet the dish was great. We have had this a couple of times and will have in the future.
