I made this yummy side tonight to go with the Phenomenal Chicken Tagine. My only change was I added garlic salt instead of salt just because I love garlic and for a little added flavor. I was hesitant to add mint to a savory dish but we loved it! I especially love how quickly this comes together. Definitely a keeper and quick side dish.

Great recipe! I had almost all of the ingredients on hand (even the mint from my garden. It comes together so fast and unlike some other couscous recipes, has a lot of flavor. I like how Melissa put the peas in before the couscous and how they then cooked up so easily with the couscous. I have not been disappointed with any of Melissa's recipes - she brings me new recipes that aren't too expensive that end up becoming family favorites.

I agree with the previous review, such a nice surprise! YUM, and so easy and simple ingredients. And most of all, such a quick addition to your meal, 5 minutes! Nothing beats that lol

I was TOTALLY unprepared for how good this was. It sounds so simple and potentially blah but it is anything but. I used a boxed "olive oil" couscous so it already had nice flavor. Don't leave out the butter, it makes a real difference. And I used lemon zest instead of juice and I'd recommend that over juice for this recipe. If you get a really tart lemon it could wreck up the delicate mint flavor so the zest is really best, LOL. But once again a simple, inexpensive recipe that hits it out of the park. Thanks, Melissa!
