    This is so good. I just made this and logged in to write the review while eating. That's how excited it made me. I love crispy cheese. Great for a quick lunch or make a bunch large party! I add whatever toppings I have on hand. bell peppers, black olives.

    This is perhaps the most simplistic recipe I've ever made, yet awesome, Never having tasted a quesadilla put together in this format, it's a tasty novelty for me. Served with a Mexican salad, this rocks, and the sauce made with sour cream or Greek yogurt is the crowning touch.
    I'm grateful Chef D'Arabian shared her childhood story and love for this simple dish; I get it!

    What a hit this was at my Kentucky Derby party!! It's a simple recipe and quick to make. I added crumbled bacon to 2 of the 4 quesadillas and they went quick...excellent appetizer for any party.

    I agree with Betty of Preston, CT and cannot say it enough and again.......rate the recipe as it is and then post with what "improvements" that you made to it to make it better!
    In my experience with this recipe, it is simple and satisfying as is, but not great! So I rated it as "ok" with 3 stars.
    To make it great, I tried adding diced jalapeno and Sargento's 4 Cheese Mexican (Monterey Jack, Cheddar, Queso Quesadilla, and Asadero, and this kicked it up another big notch on the flavor scale. But that is just our taste. We enjoy zing. If you like just a ho-hum cheddar and crunchy tortilla, then use this recipe as is for an any time of day treat. I liked the suggestion about adding bacon and plan to try it soon.

    My husband and I enjoyed this dish, very simple and quick to make. We wanted to add some meat so we added bacon. My husband couldn't get enough of the sauce.

    Saturday morning and we got up late. Had to choose between breakfast or lunch before my husband had to leave for volunteer work at 11:00 Fortunately I remembered Melissa quesadilla recipe. It was perfect and so quick. We worked together and had our 'tweener ' on the table in nothing flat. Thanks Melissaa, I won't be forgetting this one.
