Just made this today - it was super easy and super tasty. The sour cream lime sauce is sooooo good! Great for "dipping" the quesadillas into, too! Will make this again for sure! (Btw, fellow reviewers - PLEASE rate a recipe if you have ACTUALLY MADE IT! It's not fair to rate it unless you actually made it. That's the whole point of reviewing a recipe, not if you "think" it might be good or not!

This recipe is awesome! I was feeling lazy one night after work, so I gave this recipe a shot. I decided to made a closed Quesadilla, and added a tortilla on top of the cheese before I broiled it. I also added a little seasoned chicken for some protein. The lime and sour cream topping really brings all the flavors together! This one is a definite keeper in my repertoire!

What I don't understand, however, is how someone can say a recipe tastes great, but then rates it 2 stars because they don't think it's a valid recipe?! Why don't you rate it on the actual food you put into your mouth, and not the ingredients or format it was created under?!!! So what if it has two ingredients! What else would you call it besides a recipe?! Two ingredients?!

    Sorry, had to rant there....

My husband is from Tucson and his family always eats at a restaurant that serves something similar to this. He has been trying to make what he calls a "cheese crisp" unsuccessfully since we've been married. He doesn't know much about cooking and always tried to make them in the microwave. One day I told him it wouldn't get crispy unless he made it in the oven. His first oven attempt resulted in a fire. So needless to say I was so thankful the day I saw your show. Now we both know how to make them and I'm not afraid of another fire!

For something so simple, it had a lot of flavor. The crunch of the flour tortilla and tang of the dip worked so well together. This will be a nice quick-staple item for me.

Your comments regarding Melissa d'Arabian are unwarranted. As someone stated, change the channel. I think that she's rather refreshing. And BTW technically what she prepared is neither a "pizza" nor a quesadilla but a tostada but who cares about semantics. I think it's admirable that she prepares a meal for 4 for $10 and gives helpful shopping tips, as well.

So because you don't like her, we should take her off! Please! Don't think so highly of yourself! You have this neat thing with your tv, it changes channels, if you don't like it change the channel. Leave her on, the rest of us enjoy her show!

    Linda,

Not all recipes shown on the Food Network are original recipes. I'll never forget the day I saw Paula Dean make a jello salad that I've been making for over 30 years! It's a Jello brand recipe that she passed off as her own. Do I want her taken off the air? Not for that little slip, but maybe for the sexual undertones of one of her shows. Many people like Melissa and that is one of the reasons the FN renewed her show. I don't like Rachael, the sex-hungry Neelys or Big Daddy, but I would never ask for them to be taken off the air.
