    These were so delicious, as long as they freeze well - I'll find out after at christmas! - I'll definitely be making these every year. Like others I was a little nervous to try them due to some of the bad reviews, but I didn't have any trouble at all. In fact, I was surprised at how easy they were. Also, I know that the note at the bottom says that it's imortant to ***** the cookies, but I didn't and they turned out just fine. I doubled the batch and used a double shot glass for the rounds, so they would be smaller to get more cookies out of them and I used one of my daughter's hard reusable straws to cut out the window and they both worked perfectly. Making a double batch and using the shot glass, I was able to get 65 cookies! They took about 6 minutes in the oven at this size. I may even make 2 double batches next year and do a different flavored filling in the second one, maybe eggnog or gingerbread...

    I made this cookie recipe with hesitation based on the reviews BUT mine turned out FABULOUS! My 4 year old helped and gobbled up 2 right away and I insisted that we needed to save them for the Holiday. I followed the directions and agree with other reviews to lessen the cook time. I baked mine for only 7 min. and they turned out perfect. I also doubled the recipe and got about 40 cookies :D I used a knife and carved out a triangle for the tops (did not take much time and used green and so they look like x-mas trees, sooo cute! This is a keeper for next year!!! YAY
    also love the no egg recipe, bonus!

    These are really good! I was a little scared by the reviews, but they came out well. Yes, there was a decent amount of work, but what sandwich cookie isn't? I added about a 1/2 teaspoon of vanilla into the dough. As for the amount of mint, start small and add to your liking. I must have used a smaller cookie cutter, because I got more than 12...also make a couple more bottoms to tops, definitely broke a couple while icing because they are delicate! Also, I don't think any batch I made was in the oven for more than 10 mins, so watch them!

    These cookies looked so pretty in the picture posted with the recipe. I cooked them for Christmas and no one liked them. The mint in the flling was to strong. If I make them again I will change the amount of mint used. The cookie part of the recipe was good.

    They taste good...light and flakey but add more flavoring!
    They are very cute cookies but the recipe only makes a dozen and they are a lot of fuss.
    Also...it is very easy to overbake them so be careful.

    I would make them again but triple the recipe!

    These cookies just melt in your mouth! Cookies aren't easy,usually. And these aren't easy, they take some steps but well worth it.
    the cookie itself is so tender. Watch when you are baking it so it doesn't over cook. The frosting filling is just right. A couple of drops of good flavoring is all you need. It won't over power the cookie and it will give it the slight taste you want. Not a full fledged candy cane!
    I will put this recipe in the box for Christmas yearly making.
    I used, 1/3 less fat cream cheese and I can't believe it isn't butter. I also used splenda for 1/2 the sugar. All turned out perfect!

    These were an easy mix - similar to a spritz recipe I make- gotta love it - no eggs! This creamy, buttery cookie is enhanced by the wonderful mint filling (choose to flavor the cookie batter & filling with other flavors such as raspberry, caramel or even chocolate - however, in my opinion, MINT is the best!! I used my cookie press, made them into snowflakes with intense mint filling between & sprinkled the tops with powdered sugar. Very festive & melt in your mouth delicious! Making a double batch, I got over 3 dozen of these yummy sandwich cookies. They are going on my top 10 cookie list!

    A lot of work, and very bland! I have been making a different cookie every day since December 1 and sharing them with my office. These have been the least liked so far!
