Easy to make. A little bland. Added carmel extract to the 2nd batch of dough and alot more mint extract. Only makes a dozen cookies. At Christmas who only make 12 cookies?

Not worth the time and effort. I made a double batch and got only a dozen sandwich cookies. The only way to get 12 in a single batch is to make them the size of quarters. Also, just looking at the recipe, I knew they would be bland, so I added vanilla. The concept is nice, but this recipe isn't. Find a good sugar cookie recipe and make the sandwiches out of them. Forget this one.

This recipe was pretty good. I noticed the other reviews before trying it and made some adjustments for my taste. I am not a big fan of sweets or mint so I kept the sugar the same as the original and subbed vanilla for the mint. I also added about a tsp of vanilla to the cookie dough. The frosting balanced the less sweet cookie so over all I think it worked. As far as the cooking time goes I only need 8-9 min for them to be done. I liked the small batch size as it is only my husband and my self that will be eating them. Over all a decent cookie.

Thanks Melissa... Definately a great butter cookie. I hesitated over cutting the window with my limited free knife skills. I was able to use a round piping tip. Been making the 12 days for my wife and son to take to the office, had to quadruple this recipe, but even that worked great.

Even after adding 2T extra sugar, pretty bland tasting cookie. Won't go on my "Oh my God" cookie list. Definitely not worth going on the 12 days of cookie list.

I am in agreement with the other reviews; it only makes a dozen, takes quite a long time, dough could use more sugar - maybe some almond extract too for more flavor, don't bake them too long especially if you roll them thinner, and the mint frosting/filling is good, but not a great pairing with the cookie - I'm thinking the mint frosting might do well on a chocolate shortbread? My advice, steal the mint frosting recipe, double it, then pair it with an easier, tastier cookie. All this being said though, the dozen cookies did disappear very quickly.

Most of the reviews that I saw said that the cookies was bland and not much taste. I wanted to try it anyway because it looked pretty. Well, first off, mine were not as pretty, but 2nd, I added 1/2 tsp. of almond extract to the cookie dough and that really gave it some flavor. I loved the mint frosting too. I took them to a party, and everyone who had one really liked it.

A lot of work went into the making of this tasteless cookie. I will not make these again, there are so many better options to make.

There are some technical issues with this cookie. First of all, the listed temperature and cook time are too much -- mine were burned at 9 minutes, so 15 would have been a disaster. Also, the cookies puff up in the middle, like a pie crust, so they are not flat. I think it is a lot of work for 12 cookies. And, no, you can't count the tiny little "holes" as cookies to make 24 cookies! I won't be making these again.
