I make Sunday dinner for my family and this meal was very easy and quick. The Sole came out perfect. There tended to be more sauce that what I thought there would be though. Sunday dinner got a great review.

i concur with staci it is very edible. I used tilapia but it may have been better with a milder tasting fish.

I don't have fish-loving kids and they both declared it very "edible"-high praise for fish! I used snapper, very cheap where I live, the fish for 4 of us cost less than 6 bucks.

I have tried fish in parchment before. My husband couldn't say enough about how good the talapia turned out and how great the vegetables were. I even forgot to use garlic in the recipe! I cooked it a couple of minutes longer and the carrots still had a little crunch to them. This is definitely a keeper!!

I have made this before from a cook book, really nothing new. I add a little Mrs. Dash on mine for more flavor. If you don't have Mrs. Dash, try a few cloves of Garlic. You can also substiture the butter and sprinkle olive oil for a healthier meal. It just annoys me when the food network chefs throw words around like healthy and light. This recipie has entirely too much butter in it to be healthy and because most white fish is about 14.00 a pound where I live there is no way this is a $10.00 meal.

My husband and I are trying to incorporate more fish into our diet, but we aren't huge fans of fish. We were a bit skeptical to try this, but I'm glad we did. The dish was relatively simple to prepare and tasted great. My husband actually asked me to prepare it again. I swapped out the regular butter for light butter and the entire dish was only 5 points on my Weight Watchers plan. I had a bit of trouble sealing the parchment paper, but I did my best and it worked just fine. I like that that ingredients can be divided equally so we can just prepare two serviings. I made it with Tilapia filets and found the dish to be very budget friendly. Thanks Melissa for helping us find a great way to ENJOY fish.

Thought this was a great way to present fish. My kids loved it!! They ask me to make this dish at least twice a week. I would recommend this dish to anyone, the fish is flaky and the flavor is out of this world. Every dish I make from Melissa is fabulous.

I've tried a number of Melissa's recipes and loved them, but this recipe was terrible! The time stated in the recipe was not enough time for the fish to be completely done. I put it in the microwave to finish it off, but I took one bite and threw it in the trash. Great chef, terrible recipe.
