This was great! My family of 3 all thought the chicken was tasty and moist. There was certainly plenty to eat with leftovers. Great recipe!!

I've made this recipe twice now - I love love love how it comes out! It's so moist and juicy. I like to add a few fresh herbs to it. Great recipe - it's a must try!

Finally, moist chicken breasts! This was delicious. Followed the recipe but added 2 lemon halves to the brine. Brined for just an hour and it was perfect. Used the bringing liquid in the pot as the weight so I didn't have to dirty another pan - worked perfect. Next time, I will keep my burner closer to medium as my burners are quite hot and the skin was crispy in only about 5-6 minutes. My husband loved it and he usually only eats dark meat because white gets too dry - not with this recipe!

WOW! This is wonerful. The only change I made was to use rosemary instead to tarragon. This will be one of our go to recipes for whole chicken. Thanks Melissa.

Delicious! I made several changes and it turned out fantastic! Take a look at my blog to see how I brined and pan-roasted the chicken with inspiration from this recipe! Just google "Caroline's Cravings"

I made this chicken again last night, and it was great! I placed aluminum foil over the chicken before placing the second skillet on top (I'm too lazy to wash it haha and I think that made the chicken release more juices. With that and the brown bits, I made a gravy and it was delicious! My family couldn't get enough! There's never leftovers after this recipe :
