    Maybe it was just that my lemons were very juicy, but the spinach could have used a lot less lemon juice. Otherwise, I was very pleased with how this turned out. The chicken was tender, the spinach was a nice consistency, and the sauce was delicious.

    I have been making this chicken recipe since Melissa cooked it on the Next Food Network Star. It is a staple and favorite in our household. I usually cook it with her potatoes au gratin cooked in the muffin tins. Do yourself a favor and try this recipe! Yummy!

    I have been using this recipe since August 6, 2009! It was aired somewhere in that timeframe not too long after Melissa won the Food Network Star competition. I have tweaked it on and off over the past 3 1/2 years. I often use shallots with the fresh thyme rather than red onion. The dried and fresh thyme and very important ingredients to this recipe. Occasionally, I exchange dry vermouth for the white wine. The Champagne also sounds like a good idea! At times I do not use the lemon because I don't have any on hand (would never use bottled lemon juice! and it is still very good. The butter added to the sauce is a very important ingredient. Often serve a fresh salad in place of the spinach. Just a very good all-around recipe for same-o-samo Chicken breasts.

    find a celebrity Champage lemon chicken I had the recipe years ago. Tried this and used champagne very good

    This is a quick and easy recipe. Melissa vs Guy in the Food Network Magazine contest, and I think Melissa may have won this battle. I really liked the taste of the red onions cooked in the broth and lemon juice. Kind of gave them a pickled taste. Will make again for easy quick meal.

    Found this in the Foodnetwork Magazine, and made it tonight. Very, very good! I paired it with angel hair pasta with a light lemon, garlic, white wine sauce with diced red peppers, and tomatoes. Delish, I thought maybe it would be too lemony when taste testing the sauce but paired with the chicken, spinach, and pasta it was perfect! Strongly suggest!

    This is an amazing recipe! So delicious & easy. A great recipe for everyday & definitely for company. The lemon-wine sauce is so yummy with jasmine rice on the side. And maybe 30 minutes for everything to come together to a special meal. Very satisfying and healthy.

    I made this and it was quite tasty. I will make it again and tweek the recipe to be a bit more subtle in the lemon and give a pinch more pepper and garlic -- not too much though. We like spinach so I used 2 bags and could have used more...served with rice and fresh buttered bread to mop up yummy sauce. I did use wine, white vermouth, a very good pantry must. Overall a solid four stars.
