This is a nice dish, although I made a few changes. I tossed the potatoes in olive oil, salt and pepper and grilled them that way. I got wonderful grill marks and lots of flavor. Then I added all the mayo ingredients along w/ vinaigrette and it was superb. Fresh nice grilled flavors and a nice change from traditional potato salad.

I used turkey bacon instead of pork bacon to lighten this up. It was delicious and unique!

I did only use sweet potatoes as that is what I had in the house. The only other modification I made was putting a little over half of the dressing on the potatoes and using the rest to dress arugula which I placed on top of the potato salad on our plates. The flavor was fantastic. Just the one piece of bacon really flavored the dish without over powering. I will definitely make again.

Very flavorful both warm and cold. Can be adjusted to be low sodium and still taste very good!

I don't like traditional potato salad, but this was amazing. I think we ate more of the salad then the rest of the meal. Thanks for another great recipe!!
